This Air Fryer Artichokes recipe delivers a quick and tasty way to enjoy this delightful vegetable. In less time than traditional cooking methods, the air fryer transforms seasoned artichoke halves into a crispy and tender treat. Perfect for dipping in your favorite sauce, these air fried artichokes make a fantastic snack, appetizer, or side dish.

  • 2 large artichokes
  • 1 lemon, halved (one half for rubbing artichokes, the other for serving)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the artichokes: Rinse the artichokes under cold water, then pat them dry. Trim off the stem so the artichoke can sit flat. Remove any tough, small leaves at the base. Use kitchen scissors to trim the sharp tips from each leaf. Slice the top 1 inch off the artichoke. Cut each artichoke in half lengthwise and rub the cut sides with one of the lemon halves.
  2. Remove the choke: Use a spoon to carefully remove the fuzzy choke from the center of each artichoke half. Be sure to remove all of the inedible parts, leaving just the tender heart.
  3. Season the artichokes: Rub the cut sides of the artichoke halves with lemon to prevent browning. Season the artichoke halves with salt and pepper to taste, then brush them with olive oil, ensuring they are evenly coated.
  4. Cook the artichokes: Preheat your air fryer to 375°F (190°C) for about 5 minutes. Place the seasoned artichoke halves, cut-side down, in a single layer in the air fryer basket. You may need to cook them in batches if they don't all fit at once. Cook for 12 minutes, turn them over and cook for another 5 minutes or until the artichokes are tender and the leaves are easily removed.
  5. Serve: Carefully remove the artichokes from the air fryer and serve them warm. Squeeze the remaining half of the lemon over the artichokes. You can serve them with a dipping sauce.
