Zucchini Stew

Here is a super tasty, low-calorie meal on beautiful summer days.

Why We Like This Recipe: Incredibly easy and simple to make. Very low in calories and not heavy at all. Tastes so good with some crusty bread.

Ingredients

– olive oil – onion – tomato paste – zucchini – tomatoes – garlic - salt & pepper - cumin - thyme - paprika

Prepare the zucchini by dicing them as you see in the picture above.  No need to peel them, but if you want, you can.

Cook the chopped onion with oil until translucent.  Add in tomato paste. Cook it for about a minute, Add in the diced zucchini and cook for 2-3 minutes, Let it cook covered for 5 min.

Add in chopped tomatoes, garlic and spices. Cook it covered for 20 min.

Garnish with chopped parsley and serve warm.
