I make these coins and use them with pasta.

I fry the zucchini circles in olive oil until they are browned on both sides, then mix into the same skillet cooked & drained pasta. Angel hair shape is good this way.

My Turkish friend taught me to make the yogurt/garlic/salt sauce.
Next time I make zucchini coins I will have it your way with this sauce : )

Looks delicious. I love zucchini stir fried with lots of big onions. It has a natural sweetness of its own and taste very delicious.

Ok, here's another recipe I cannot wait to check out. Its not full on zucchini season here yet, but when it is, I am coming back for these goodies. I 'll be making them soon.

I would love to visit for breakfast with you sometime - it always sounds like such a satisfying meal! And I loved fried zucchini myself - simply done with just a squeeze of lemon juice and maybe a little rosemary - though the yoghurt dressing sounds lovely too.

I have had these - but not with the dressing... and that looks like the perfect touch. SO good. I have never thought of yogurt with just garlic and salt - but why not? I love the idea!

lk- I sometimes serve it with salsa, but yogurt is our favorite on zucchini.

Jenn- I do love summer and its fruits and vegs. We've already started to eat cherries, berries, plums, fresh herbs and it makes us feel healthier and happier.

Faith- Frying zucchini is one of our favorite ways to eat it.

Kiki- Yogurt goes very well with zucchini no matter how it's cooked.

Elra- I love frying eggplants, too but it absorbs a lot of oil, so I don't make it often.
