We’ve been enjoying the sun, beach and the amazingly blue sea for a few days and never want to think of the end of our vacation in Akyarlar, Bodrum. There is no doubt that it’s far hotter here than it is in our hometown. Our favorite lunch here is Watermelon Feta Salad, but grilled fish is our firts choice when it somes to dinner. Your mind starts to find other refreshing recipes to overcome the sultry days here and these Skinny Mini Watermelon Cakes are one of the greatest ways we created here.
Watermelon is the best summer fruit on its own when refrigerated. Nobody would refuse this. You can serve it in numerous ways and shaping it with a cookie cutter might be something common. I love to use these circle cookie cutters for different purposes. Did you see my easiest Mini Chocolate Cakes? I cut the cakes with the same cookie cutters.
Watermelon bites cut with cookie cutters already look nice, but we wanted to give these healthy and refreshing bites a fancy look to make them in the form of watermelon cakes, which is more perfect for summer parties.
Watermelon and feta make a wonderful combination, but we used a different topping this time. These Skinny Mini Watermelon Cakes are more like a sweet treat which is not heavy. We topped the bites with creamy Greek yogurt sweetened with honey. We mixed the Greek yogurt with water until it is creamy yet not too loose because we wanted them to stand on the bites without deforming. You can definitely scoop the yogurt on the bites using a tablespoon, but they won’t look as fancy as these ones. You just need a cream pipe to give the yogurt a nice shape. Pipe the yogurt just as you do when making a cupcake.
I can’t think of a fancy treat without sprinkles. They make everything look even nicer, so decorate your healthy watermelon bites with some sprinkles. We would have added some berries too, which I think would add a great kick on these bites, but we didn’t have any.
- 1 small watermelon
- ½ cup Greek yogurt
- 4 tablespoons water
- 2 tablespoons honey
- Sprinkles for garnish
- Cut the watermelon in 1 inch wide round slices.
- Cut circles using a circle cookie cutter and place on a tray.
- Mix Greek yogurt with water to loosen it a bit. It should be creamy but thick enough to be piped on the watermelon bites.
- Add in honey and mix well.
- Transfer sweetened yogurt in a pastry piping bag and pipe about 1 tablespoon of it onto each bite.
- Refrigerate the bites for about 15 minutes.
- Garnish with sprinkles before serving.
