Roasted Onion Salad

Onion is one of number one ingredients in our cuisine. We use it almost in all our dishes. Also, plain onion itself could make a side dish too. We just cut it into four even without peeling and accompany it with the main dish. We remove the layers one by one to eat them, we may not use a fork for this, just take a layer and bite it when eating the main dish. Well, we eat onion quite often either plain or in salads.

 There were two versions of onion salad on our table at Adana kebab restaurant. One of them was raw and rubbed with sumac, you can find the recipe here. Other one was another salad with roasted onion. As you see in the picture, onions are roughly cut, a mixture of a little sumac, paprika and salt was sprinkled on them, and a little extra virgin olive oil was drizzled over it. If you don’t like raw onion, you should try this one. Onion becomes sweet and with no bad smell when roasted. This makes a great side dish to serve with meat or chicken dishes.

herbs Roasted Onion SaladThey also serve a mixture of parsley and mint on a plate surrounded with radish slices. We squeezed lemon on them and we put small bunches of them in our mouth every now and then when enjoying all tasty foods on the table. This plate of herbs is another mezze to complete a meal just like salad,  pickles or yogurt. Ending up your meal with these herbs is also suggested as they make your breath clean and fresh.

Her love of cooking started as a little child by messing her mom's dishes up! Despite all her mom's effort to teach her how to cook, she was happy as an 'assistant'. What made her want to jump to an upper level was her dad's compliments for the first dish she made herself. Finally, her husband, who claims that ancient humans were stronger than we are today as their main food source was meat, helped her love cooking meat dishes and improving vegetable dishes to make them more edible for him!

  2. The freshness of both of those dishes is wonderful. I love roasted onions but have never had them with sumac on them. The simple salad of mint, parsley and radish is gorgeous.

    I would never have thought to serve roasted onion in this manner, but it sounds wonderful. As you say, roasted onions are so sweet, and I love the tender texture.

  7. i have tried sumac only on bread and in pilaf but never thought of pairing them with onion.
    the mint salad sounds refreshing!
