Apricots were naturally sweet, but not enough to be a kid friendly or guest friendly treat. Well, personally I don’t like too sweet things and they had enough sweetness for me, but not for other family members. To make my apricot popsicles more appealing for everyone, I used honey instead of sugar. You can just leave it out if you love a little tartness in your pops or use use sugar or stevia to make it sweeter.

Fruit popsicles are very easy to make and you can create endless flavor and combinations. The only things you should have are pop molds and the rest depends on what you are craving. If you don’t have store bough molds, you can simply use paper cups and freeze your pops in them.

I mostly make lemonade popsicles because we always have a full picther of homemade lemonade in the fridge in summer and what I need is just to fill in the molds with it, put them into freezer and wait. This time I wanted to use pureed apricots to use up the mushy apricots waiting for a long time in the fridge before they were completely gone. Isn’t it a great idea? You can do the same with other fruit if they don’t look appealing any more, but good in taste.

Very easy apricot popsicles sweetened with a little honey.
Ingredients
  • 10 tablespoons hot water
  • 2 tablespoons honey
  • 17 oz apricot, peeled
Instructions
  1. Mix honey and water and make a syrup.
  2. Puree the apricots in a blender.
  3. Combine the honey water and pureed apricots, strain if you like a smooth texture.
  4. Share the mixture in popsicle molds, insert the sticks and freeze until solid, 3 to 4 hours.
