These could be classic homemade vanilla pudding pops, but I remembered the leftover cherries in the refrigerator and decided to add them too and these became cherry vanilla pudding pops. These are two layered pops; one is frozen vanilla pudding, the second layer is frozen sour cherry juice. I added a little grape molasses to the sour cherry juice as it wasn’t sweet enough. Vanilla pudding is already a kind of dessert. These don’t have any heavy cream, so they are healthier than ice cream. The best thing about making popsicles is that you can prepare them overnight and surprise your family the next day. Imagine how everyone will feel when they see the freezer full of popsicles! You can even make various of them at the same time since it’s really easy to make. If you don’t have time, just puree the fruit you have, strain and freeze. Everyone will have their favorite popsicle this way.
These cherry vanilla pudding pops have a nice combination of tart and sweet flavors. I filled the cups first with vanilla pudding and then with cherry juice so that you first start with a creamy sweetness and then end up with the tangy flavor of sour cherries. You can do the opposite if you like.
- 2 and ½ cups milk
- 2 tablespoons corn starch
- 3 tablespoons sugar
- 1 egg yolk
- 1 teaspoon vanilla powder or extract
- 3 cups sour cherry
- ¼ cup grape molasses
- Prepare the pudding first. Mix everything in a pot except cherries and molasses and cook it over high heat stirring continually. Bring the heat to the lowest and cook it stirring occasionally until it thickens, about 15 minutes. Let it cool.
- Fill half of the popsicle molds or plastic cups with this pudding and place in your freezer and freeze about 1 hour. Insert wooden sticks.
- Puree sour cherries in the food processor and strain it through a mesh strainer. Mix with grape molasses. Fill up the molds with this mixture after 1 hour and freeze overnight.
