I remember the lemon trees in our garden in my hometown, they would bring you a great enthusiasm and fill you with complete happiness when they wore the blanket of scented white blossoms. If you have never seen a lemon tree and smelt its flowers, you’ve missed a lot!</p>
<p style="text-align: justify;">Drying lemon zest could have a similar effect in your kitchen. It is very easy to dry lemon zest at home. When you squeeze lemon for a dish, don’t waste the zest. Put them aside on a plate and wait for 2-3 days. You will see they start to dry and to curve on edges. Put them in oven and cook at 100C until golden. and pound them in a mortar until powder or the size you like. Hubby made this lovely colored dried lemon zest and he left them in the size of crumbled nuts. He said he wanted to feel them in mouth so he didn’t pound it a lot.</p>
<p style="text-align: justify;"><strong>What can you do with dried lemon zest?</strong></p>
<p style="text-align: justify;">It’s up to your imagination and creativity, but to share some ideas, here are his suggestions:</p>
<ul style="text-align: justify;">

I am always amazed by the flavor change when fruits or vegetables are dried. I guess they become more aromatic and flavorful when they have a stronger bond with the sun. This is the magic of nature! If you dry enough fruits in summer, you will always have some snacks in your pantry. Also, you can add them in your cakes, stews or salads when you want to make a twist on your regular recipes. You can even make <a href="http://www.giverecipe.com/dried-apple-compote.html" target="_blank"><strong><span style="color: #ff0000;">sundried fruit tea</span></strong></a> in winter and enjoy it on cold days. You will love its scent and flavor!</p>
<p style="text-align: justify;">What do you need to dry apples? Apples in the amount you want, clean cloth and sun. Chop apples with their peels in the shapes you like, spread them on clean cloth and wait under sun until dried. You can dry them in the oven too, but I’m not sure if they have the same flavor.</p>
<p style="text-align: justify;">The amount of water in apple shrinks when it is dried, but its health benefits are still there! Although it loses vitamin C, sundried apple is still rich in minerals, and it protects our body against free radicals. Its tea is recommended to diabetics as its sweetness is enough and you don’t need to add sugar. It is a good source of fiber and makes your digestive system happy.</p>

These nuts have a positive effect on health. If you have them 4 times a week, you will <strong>reduce the risk of heart diseases</strong> by 30-40%. Also, those who eat these nuts more often in certain amounts reduce the risk of diabetes. So doctors advise us to make almonds, hazelnuts and walnuts a vital part of our diet.</p>
<p style="text-align: justify;">
<strong>So when should we eat these nuts?</strong> We can prefer having them as snacks instead of cookies, cakes, or biscuits especially 2 hours before lunch and dinner. This helps us not eat more than we need at these meals. Eating these right after meals makes their benefits reduce and even disappear when eaten with alcoholic drinks.</p>
<p style="text-align: justify;">
<strong>How much should we eat?</strong> Each of these nuts has health benefits with different features, so the best thing is to have similar amounts of each in a week. The ideal amount of nuts you should have in a day shouldn’t be more than 50g. Otherwise, you gain weight! So be careful with the amount!</p>
<p>Nuts can no way replace medicine for people with certain heart diseases, but they could be great supporters!</p>

<p style="text-align: justify;">When you hear imam’s voice calling for the prayer from all minarets of the city, you know that everyone fasting is ready to break their fast. Some people are sitting at a perfect dinner table with a warm soup, a kind of meat as a main dish and various side dishes like rice pilaf, <a href="http://www.giverecipe.com/stuffed-bulgur-kofte-video.html" target="_blank"><strong>stuffed bulgur kofte</strong></a>, <a href="http://www.giverecipe.com/stuffed-grapevine-leaves.html" target="_blank"><strong>stuffed grapevine leaves</strong></a> or <a href="http://www.giverecipe.com/stuffed-cabbage-rolls.html" target="_blank"><strong>cabbage rolls</strong></a>, a green salad or <a href="http://www.giverecipe.com/cacik-recipe.html" target="_blank"><strong>cacik</strong></a> and a Turkish dessert to end their meal while unfairly enough, some people have just one kind of dish or just tomato, cheese and olive to end their fast. As we witness all over the world, not all people have the same chance of having the same food. However, when they hear imam’s voice as a reminder for breaking their fast, they all have the same feeling. Whatever they have on their table, they think they deserve to eat it after a long fast.</p>
<p style="text-align: justify;"><strong><span style="color: #ff0000;">Breaking fast</span></strong> is not simply eating something for muslims. They generally take care to have certain foods at the very begining of meal. Dates (<em><strong>hurma</strong></em> in Turkish), which are known as the <strong>fruit of heaven</strong>, are on top of this list. The rest are olives and water. As these are holy for muslims, it’s important for them to start their meal with these. Dates, olive, and water have a special place in the holy book <strong>Quran</strong>, so muslims feel closer to God when they have these first. Why are dates more important for muslims during Ramadan? It’s said that our <strong>prophet Muhammed</strong> used to break fast with dates, and muslims want to follow him by having dates at the beginning of their meal. I think the prophet Muhammed had a good reason for this. He knew that the amount of sugar in dates would help people’s bodies and overcome <strong>low blood sugar</strong> caused by hunger during the day, so he advised muslims to break fast with these fruits of heaven. In addition, it’s told in Quran that God helped <strong>Meryem </strong>telling her to eat dates to bear her baby easily. Doctors still advise pregnant women to have dates during and after their<strong> pregnancy</strong>. They say that dates contain a big amount of sugar and this helps both recovering weak bodies of new mothers and increasing the amount of milk their babies need. Dates have many other benefits for health as they contain fruit sugar, vitamin A and B, calcium, phosphorus, protein, iron, potassium, magnesium, zinc. As you see, it has the ingredients of most medicine. With these features, it is like a natural medicine against many diseases.</p>
<p style="text-align: justify;">Date trees are so similar to palm trees. The main difference between a <strong>date tree</strong> and <strong>palm tree </strong>is that palm tree has no fruits and the other difference is their leaves. Leaves of date tree are so thin and sharp while palm tree has flat and softer leaves. We have lots of palm trees in the Southern region of Turkey, but unfortunately we don’t have date trees.</p>
<p style="text-align: justify;">Dates, which we see at the markets mostly in Ramadan, have different kinds for every budget so that all people can buy. These are imported from <strong>Tunisia</strong>, <strong>Algeria</strong>, <strong>Saudi Arabia </strong>and mostly from <strong>Iran</strong>. The cheapest dates are coming from Iran and the most expensive ones are from <strong>Medina</strong>, Saudi Arabia. There is a special species of dates in Medina, the tree of it was planted by the prophet Muhammed, so it’s known as date of prophet. As you can guess this one is the most expensive one, about 100 Turkish Liras (around $75). Personally, I think some big companies and date traders exploit peoples religious beliefs and they put more price on dates than their actual value. And this has nothing to do with Islam or humanity.</p>
<p style="text-align: justify;">When you go to a restaurant for dinner during Ramadan, you see that there are one portion dates (totally free) on each table ready for muslims to break their fast. You can’t see this after or before Ramadan. When people hear imam’s voice, they have a date first, then they drink water and then start their meal.</p>
<p style="text-align: justify;">Despite all positive sides of dates, it’s not so common to eat dates except the month Ramadan. While we can easily find dates everywhere during Ramadan, we can find them in some rare shops in other months. As a sweet tooth person, I love dates and I buy dates not just during  Ramadan but I eat more during Ramadan. I think they are great alternatives to candies and chocolate. I guarantee they are not less desirable for kids than candies or chocolate.</p>
<p style="text-align: justify;">By the way, there is an interesting tradition in my hometown. Old women don&#8217;t waste <strong><span style="color: #ff0000;">date seeds</span></strong>, they wrap one date seed with a small piece of cloth, give it a triangle shape and attach it on clothes of new born babies with a safety pin. They believe that it brings luck in their future life. And some people put these seeds in their wallets as they believe it brings money. I don&#8217;t have such superstitions, but I love the shape and color of date seeds.</p>

<p style="text-align: justify;">I want to introduce the kinds of dried fruits used in Turkey in my blog and dried figs will be the first today. Dried fruits have an important place in Turkish kitchen, I don’t know if other cultures have the same habit of getting prepared for Winter during Summer. In Summer, people in Turkey are just like ants as they love spending time on kitchen preparations for Winter. What are these preparations? They dry fruits, vegetables, they make pepper paste and tomato paste and dry it under sun. They make the utmost benefit from the sun as the climate is so convenient for drying things. However, those living in big cities don’t have a chance of doing these at home, so they buy from a supermarket or go buy it from villages nearby. As you all know, buying something from its origin is always the best.</p>
<p style="text-align: justify;">Dried fruits are used in different ways. They can be used in compotes (stewed fruit), in cakes, in <a href="http://www.giverecipe.com/fig-dessert.html" target="_blank"><strong>desserts</strong></a>, in some dishes or they can even be comsumed plain.</p>
<p style="text-align: justify;">Mom brought these dried figs you see in the picture from Aydın, the city of Turkey which is famous for its figs. She bought them from villagers at bazaar, so they are all natural unlike the ones sold in supermarkets.</p>
<p style="text-align: justify;">Tons of figs are sent to other cities of Turkey and all around the world from Aydın. As you know, fig is a Summer fruit and when I was a child, I used to look forward to climbing its tree and eating kilos of fig on it in Summers. Its leaves make you itch, but it didn’t matter for me as a child.</p>
<p style="text-align: justify;">Towards the end of Summer, people in Aydın start to dry figs for winter. They pick figs and lay them on a piece of cloth in a field and these figs start to dry under sun and then they are coated with flour to prevent any decays. Dried figs are as tasty as the fresh ones, so these are like a kind of dessert even plain. And you can eat them as a healthy snack between meals. Moreover, it has also several benefits for our health. It is rich in proteins and vitamins which renew cells in the body. It helps our digestion system with its fibrous structure, protects our body from bacterium, reduces the level of cholesterol in blood.</p>
<p style="text-align: justify;">Although it has a large amount of sugar in it, it’s not harmful as it’s all natural sugar. Doctors recommend those who hate milk to eat figs, which contain the necessary calcium for health<br />
In Winter people generally consume dried figs plain or with walnuts,  they make jam of it, they make desserts of it, or they use it in cakes. We love dried figs so much that we always have a jar of them on the kitchen table to reach easily whenever we crave for a snack or dessert. So these dried figs can replace candies, chocolate or other junk food.</p>
<p style="text-align: justify;"><strong>Fig Tree</strong><br />
There is an idiom in Turkish culture: to plant a fig tree in one’s yard. It means to make something very bad for someone, to give harm to someone. The reason behind this idiom is that roots of a fig tree are very strong and they can spread easily. If we imagine that someone plants a fig tree in your yard, your house will collapse soon because of the roots of the tree.</p>
